If you’re in the mood for simple and easy and you can plan ahead a little bit, this pulled pork recipe is perfect. It really is as easy as throwing some ingredients in a slow cooker and then just pulling it out and shredding the pork when it’s done.

What Can I Use This Red Pulled Pork In?

This pulled pork is great for anything from keto tacos, tamales, tamale pie, taco stuffed avocados, pork salads, burritos, burrito bowls, and more!

Basically anywhere you’d use your favorite pulled pork recipe, you can use for this red chile pork.

Easiest Way to Shred Pork

The fastest and easiest way to shred pork to make pulled pork is using a mixer. I use a Kitchen Aid mixer with the paddle attachment.

I generally cut the pork into smaller hunks, so maybe quarters or fifths. Then I put one or two of those pieces into the mixer and mix on low till the pork is just shredded. It’s magic!

Don’t allow the mixer to run too long, or the meat becomes mushy and pulverized instead of shredded. This is another reason I do one or two hunks at a time.

If you try to do all of it at once, you may get a completely unshredded hunk of meat with lots of mushy little pieces instead of uniformly shredded pork.

  1. Place pork loin in crock pot.
  2. Pour enchilada sauce over pork. Sprinkle the remaining ingredients on top of pork.
  3. Cook in crock pot on low for 8 hours or overnight.
  4. Remove from crock pot and shred (see above instructions for how to do this very easily with a mixer). Add as much of the cooking liquid from the crock pot back into the pork as preferred.
