Easy Keto Red Chile Pork in Crock Pot
If you’re in the mood for simple and easy and you can plan ahead a little bit, this pulled pork recipe is perfect. It really is as easy as throwing some ingredients in a slow cooker and then just pulling it out and shredding the pork when it’s done.

Easiest Way to Shred Pork
The fastest and easiest way to shred pork to make pulled pork is using a mixer. I use a Kitchen Aid mixer with the paddle attachment.
I generally cut the pork into smaller hunks, so maybe quarters or fifths. Then I put one or two of those pieces into the mixer and mix on low till the pork is just shredded. It’s magic!
Don’t allow the mixer to run too long, or the meat becomes mushy and pulverized instead of shredded. This is another reason I do one or two hunks at a time.
If you try to do all of it at once, you may get a completely unshredded hunk of meat with lots of mushy little pieces instead of uniformly shredded pork.

Easy Keto Red Chile Pork in Crock Pot
This Keto Red Chile Pork is super easy to make. Just dump the ingredients into the crock pot, set on low for 8 hours or overnight, shred the red pork, and you'll be ready to add it to tamales, tacos, burritos, salads, and more!
Ingredients
- 2 pounds pork loin roast (mine was center cut)
- 25-28 ounce can red enchilada sauce (check for one with low to zero carbs)
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
Instructions
- Place pork loin in crock pot.
- Pour enchilada sauce over pork. Sprinkle the remaining ingredients on top of pork.
- Cook in crock pot on low for 8 hours or overnight.
- Remove from crock pot and shred (see above instructions for how to do this very easily with a mixer). Add as much of the cooking liquid from the crock pot back into the pork as preferred.
