Keto Tamale Pork
Red pork is generally what is used in tamales, which is the original reason I created this super easy crock pot recipe. I wanted something easy, since tamales are already pretty a big process.

Easiest Way to Shred Pork
The fastest and easiest way to shred pork to make pulled pork is using a mixer. I use a Kitchen Aid mixer with the paddle attachment.
I generally cut the pork into smaller hunks, so maybe quarters or fifths. Then I put one or two of those pieces into the mixer and mix on low till the pork is just shredded. It’s magic!
Don’t allow the mixer to run too long, or the meat becomes mushy and pulverized instead of shredded. This is another reason I do one or two hunks at a time.
If you try to do all of it at once, you may get a completely unshredded hunk of meat with lots of mushy little pieces instead of uniformly shredded pork.
