Homemade Trail Mix
It was from this same family that I learned you could make your own trail mix.
I know. Kids are easily wonderstruck. Or at least, I was. Gullible, naïve, and constantly wonderstruck were words you could use to describe me through my mid-twenties.
It was a cool concept to me. You take whatever snack food you enjoy, usually from the bulk section of a grocery store–such sections are depressingly difficult to find nowadays!–and mix it all together.

My trail mix, um, mixing, has evolved since those days. I love homemade trail mix and granola. The two are so similar that it’s easy to make a batch of both at the same time.
My favorite way to make it is to toast the nuts and seeds and give it that delicious toasty crunch that makes even the texture enjoyable. So yummy!
My favorite part about this trail mix and granola is the pumpkin seeds. They pop as they expand, and continue to pop when you take the tray out of the oven.
It’s a great recipe to make with kids because it’s easy, but also because you can take the tray out of the oven, immediately place it on a table, and sit around watching the crackling pumpkin seeds slowly “pop and hop” as they cool.
So fun!
On the Trail with your Keto Friendly Trail Mix

I live in a beautiful place, guys. Don’t be jealous. Just come visit me. We’ll have granola for breakfast and eat trail mix on the mountain.
Recipe Add-ins, Notes, and Suggestions For Keto Trail Mix and Keto Granola
An interesting add-in would be cacao nibs. I didn’t add this to the list of main ingredients because it’s really an acquired taste. If you’re not used to the strong bitter taste of cacao nibs, you may not want to add them in.
If you do choose to add the cacao nibs, the flavor gets milder as the mix cools, so I would definitely not sneak any while it’s warm.
And if you’re adding in cacao nibs you probably won’t want to skip the sweetener unless you’re really used to cacao nibs. The sweetener balances out the bitterness of the cacao.
Don’t be shy, though! I don’t want to scare you from using cacao nibs. They’re a really fun, healthy addition. All the health benefits of dark chocolate without the added junk.

There’s a link to the cacao nibs I use in and under the recipe. Don’t let the “fermented” part scare you. Cacao nibs are one of those foods that becomes milder when fermented.
The only differences between the trail mix and the granola is the size of the pieces and the addition of hemp seeds to the granola (serious yum!).
For example, the pecan halves from the trail mix will be chopped for the granola, and instead of coconut chips, you’d use shredded coconut or small flakes. I ended up chopping my coconut chips.

Keto Trail Mix Recipe and Keto Granola Recipe!
Keto Trail Mix and Granola (Pumpkin Spice!)
What could be easier than using an almost identical ingredient list for TWO different tasty recipes! You can make this trail mix and granola at the same time. At the end, you'll have breakfast AND a snack! Enjoy this keto trail mix and granola!
Ingredients
Trail Mix:
- 1 cup pecan halves
- ½ cup raw shelled pumpkin seeds or pepitas
- ⅓ cup unsweetened coconut chips
- 2 tablespoons fermented cacao nibs, (optional)
- 1 egg white
- 1-2 packets monkfruit sweetener, or other preferred zero-sugar sweetener
- ¼ teaspoon pink Himalayan salt
- 1 ½ tablespoons pumpkin spice
Granola:
- 1 cup pecans, chopped
- ½ cup raw shelled pumpkin seeds or pepitas
- ½ cup shredded unsweetened coconut
- ½ cup hemp hearts
- 2 tablespoons fermented cacao nibs, (optional)
- 1 egg white
- 1-2 packets monkfruit sweetener, or other preferred zero-sugar sweetener
- ¼ teaspoon pink Himalayan salt
- 1 ½ tablespoons pumpkin spice
Instructions
For the Trail Mix:
- Preheat oven to 350°F.
- Add pecan halves, pumpkin seeds, coconut chips, and cacao nibs (if using) to a medium bowl.
- In a separate bowl, add egg white, sweetener, and salt. Whisk thoroughly.
- Pour egg white mixture over nut mixture, and stir thoroughly. Sprinkle pumpkin spice over the trail mix and stir until evenly incorporated.
- Spread on a baking tray lined with a silicone baking mat or parchment paper. Bake in 350°F oven for 12-15 minutes, stirring after 7 minutes. Do not allow to brown or burn. Cool on counter.
For the Granola:
