What is Bocconcini?
Bocconcini is simply fresh mozzarella formed into little balls. They’re really great for the keto diet and go perfect in salads, like this low carb bocconcini salad. They’re also good for snacking.

How to Make Keto Bocconcini Salad
Keto bocconcini salad is actually quite simple, but I thought you might like to see a few simple techniques (especially the garlic crushing) spelled out in photos. If you don’t need the extra info, just scroll down under this tutorial for the printable recipe card.
- Halve the tomatoes
For this recipe, you can use grape tomatoes or cherry tomatoes. Just remember that cherry tomatoes have twice as many carbs per cup, so your carb count will be a bit higher if you use cherry tomatoes. The nutrition information for this bocconcini salad was calculated using grape tomatoes.
- Mince and crush garlic
Start by mincing the garlic. Take your knife blade and push it down sideways on top of the garlic, smashing it into the cutting board. This will release yummy flavorful juices.
- Add all ingredients together
Using your hands, rip each fresh mozzarella ball in half and add to the bowl with the tomatoes. Then add the rest of the ingredients to the salad and toss gently. These salad hands work great for tossing salad. For a little more flavor, you can also add all the dressing ingredients to a dressing shaker, let the flavors marry for a few hours in the fridge, and then pour over the salad.

Ingredients
- 2 cups grape tomatoes, halved
- 1 1/2 cups bocconcini (fresh mozzarella balls)
- 1/4-1/2 cup chopped fresh basil (depending on how much basil flavor you like) or 1 T dried basil
- 1/4 cup olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, minced and crushed
- 5 drops stevia (optional - click for the one I use)
Instructions
- Rip the bocconcini (fresh mozzarella balls) in half.
- Add all ingredients to a medium bowl and toss gently. Spoon into bowls and enjoy!
