Skip the oatmeal on keto and go for almond flour keto “noatmeal”!

Oats may be generally considered NOT keto-friendly, but that doesn’t mean you have to skip what warm bowl of filling morning comfort!

This is why “noatmeal” was created. It’s exactly like it sounds. It’s “oatmeal” without the oats and can be made a LOT of ways, but is almost always grain free.

And try this super easy Chia Flax Noatmeal Creme Brulee–you can make it in the oven or Instant Pot!

I miss my Cream of Wheat! what can I sub for the konjac powder?

    • Jenn May 3, 2020 at 8:00 pm - Reply

I’ve been meaning to experiment with xanthan gum for this recipe, but I haven’t yet. If you do, let me know! I love konjac root, though. There are claims it helps with weight loss, but I have no idea if those are founded or not.

Can you freeze this recipe or divide the ingredients for 1 portion?

    • Jenn May 12, 2020 at 8:29 am - Reply

I actually haven’t tried freezing this! You can definitely divide it, though. I’ve done it many times. Just be sure to watch it closer and whisk frequently so you don’t burn it.

Can you make a full batch and eat it over a period of a few days if kept refrigerated?

    • Jenn January 14, 2021 at 8:56 am - Reply

That’s a great question. I actually haven’t ever tried that before. Like regular cream of wheat, it might thicken and be lumpy, but you could always try reheating it on the stove while stirring and adding a little extra almond milk. Let me know if you try it that way!

I use a tbsp of whole Psyllium Husks, 1 scoop Collagen Peptides and about 1/4 c egg whites as thickener and to up the protein

Sooo bumber..All set to try it..and…Out of sour cream..anybody try it with plain Greek yogurt?

        • Jenn June 27, 2022 at 10:11 am - Reply

Oh no! I hate when I run out, haha! You can definitely try it with Greek yogurt. It’s also creamy and has a similar tang to sour cream, but isn’t quite as tangy. So the taste will just be slightly different. Enjoy!

Very cool to see a Norwegian recipe adapted for keto! Just an FYI for those averse or allergic to mushrooms — konjac is from a plant, Amorphophallus konjac, not a mushroom. Somewhere I have a picture of my dad standing next to the flowering structure of another member of this plant genus, Amorphophallus titanum, and it is taller than him by a couple of feet! That one emits an odor to attract flies for pollination, very much like dead shrimp. They are really interesting plants.

Wow, that’s really interesting! There are tons of images when you google it, too. I wonder why it’s advertised everywhere as a part of a mushroom. Thanks for clarifying!

Oh my goodness, this is a dead ringer for the taste and texture of traditional grot! I substituted Psyllium Husk Powder and Half & Half for the cream and water because I was out of cream. My go to sweetener is Lakanto Golden and I used their new Lakanto Brown (sugar) substitute on top with the melted butter and cinnamon. What a treat!

Wonderful! I’m so glad to hear that. Don’t tell the other recipes, but this might be my favorite breakfast recipe on the site. :)
