Pesto comes in many varieties. This low carb pesto version features spinach as its main ingredient.
- spinach
- fresh basil
- fresh parsley
- roasted red peppers
- minced garlic

Spinach instead of basil in pesto?
Spinach pesto is my favorite pesto for two reasons.
- Spinach is WAY cheaper than basil! While I always prefer to have a garden and grow my own produce, I’ve never lived anywhere where I could have a cheap supply of fresh basil year round.
- Since spinach is a much milder flavor than basil, my kids often prefer this version to the basil-heavy version. And they don’t know they’re getting more nutrient-dense spinach, too!
The great thing about this recipe is that if you’re allergic to basil or if you’d like to omit the basil altogether, that’s totally fine! There’s plenty of flavor still with the roasted red pepper, garlic, and parsley.

Which blender do you use for pesto?
Pesto is hard to mess up. It really doesn’t require any fancy equipment. I use my trusty Nutribullet Blender for this keto pesto! I like it because it’s small and easy to clean and is perfect for smaller recipes like smoothies and pesto.

Keto Spinach Pesto
Keto Spinach Pesto with roasted red pepper is the perfect keto condiment to add a little more flavor to your dishes!
Ingredients
- 3 cups spinach
- 1/4 cup fresh parsley (or 1 T dried)
- 1/4 cup fresh basil (or 1 T dried)
- 1/3 cup roasted red peppers
- 2 teaspoons minced garlic
- 1/4 cup walnuts
- 3/4 cup olive oil
- 1/2 cup shredded parmesan cheese
- 2 tablespoons softened butter
Instructions
- Add all ingredients to a blender (I use this one!).
- Process till almost smooth or till the desired consistency.
- If the pesto is too thick, you can add more olive oil a tablespoon at a time, blending or stirring after each addition.
