Easy Keto Stuffed Peppers Using Veggie Dip
One of the easiest ways to make any stuffed pepper is to just grab your favorite dip and stuff it into the pepper and bake it.
It’s one of my favorite keto secrets because I love dips, but sometimes finding low carb dippers isn’t easy.
With this recipe, you have it doubly easy because the dip itself is only 3 ingredients and takes 10 minutes or less to make. Then stir in some cheddar cheese, stuff into peppers, and bake!
Can you make a stuffed pepper without rice?
The classic stuffed pepper recipe includes rice, onion, tomatoes, ground beef, cheese, and a few other ingredients. Can you make them without rice? Why don’t you taste this recipe and answer that for yourself? (Hint: Absolutely!)
Stuffed bell peppers can be made without rice and taste just as delicious. This version with sausage veggie dip and cheddar cheese is actually my favorite because it tastes amazing and as a bonus, it’s much quicker and easier!

These stuffed peppers are so simple! The proof is in the number of ingredients:
- bell peppers
- Sausage Cream Cheese Vegetable Dip (only 3 ingredients–dump into a skillet and warm while stirring for 10 minutes–easy peasy!)
- cheddar cheese

How long can you keep uncooked stuffed peppers in the fridge?
Stuffed bell peppers are a great meal prep option because they can be kept in the fridge for a few days after stuffing them prior to cooking.
My recommendation if you plan to do this is to allow the filling to cool completely before filling the stuffed peppers. The reason for this is because the warmth from the filling would heat up the peppers and make them a little mushy. Stuff the peppers, cover them with plastic wrap or in a sealed container.
Stuffed bell peppers can be kept in the fridge uncooked for up to 3 days. If you’ve filled them while the filling is warm, I recommend cooking them the same day and not leaving them to sit overnight.

Ingredients
- 1 1/2 cup 3 Ingredient Sausage Cream Cheese Veggie Dip (click here)
- 2 orange, red, or yellow bell peppers
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F.
- Slice the tops of both peppers and scoop out seeds.
- In a small bowl, stir the cream cheese dip and the cheddar cheese together.
- Stuff the cream cheese dip into the peppers evenly. Add a sprinkle of cheese to the tops, if desired.
- Nestle the peppers into a muffin tin and bake for 25 minutes at 375°F.
