What makes this keto tomatillo dressing so special is that it’s a copycat recipe of the same one used at the popular restaurant, Cafe Rio. If you’ve never been there, it’s one of those build-your-own Mexican salad or burrito places that just has so much amazing flavor in every dish.
Cafe Rio’s creamy tomatillo ranch dressing is no exception, with its tangy, lemony tomatillos, fresh cilantro, creamy avocado, and freshly squeezed lime.

I don’t recommend this. For some recipes, ingredients are meant to be used fresh, and this salad dressing is definitely one of those.
Tomatillos are amazing little fruits (yes, just like their relative tomatoes, tomatillos are considered fruit!). They’re beautiful, really. They look like a green tomato with a lovely, paper-lantern-like husk on the outside. Just peel off the husk with your hands, and wash the stickiness off the tomatillo’s skin (this is normal!). Then throw those babies into the blender!

Ingredients
- 3 tomatillos
- 1/2 avocado
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup fresh cilantro
- 1 teaspoon minced garlic
- 1 jalapeno or serrano pepper
- 1/4 cup fresh parsley (or 1 tablespoon dried)
- 1/4 teaspoon dried dill
- 1 1/2 tablespoons freshly squeezed lime juice
- 1/4 teaspoon pink Himalayan salt
- 1/8 teaspoon freshly ground black pepper
- water
Instructions
- Add all ingredients to a blender, except for water.
- Pulse till smooth, adding a little bit of water each time till the dressing is your desired thickness.
