Can I use frozen strawberries for this sugar free strawberry sauce?

Yes! In fact, for recipes where the strawberries are cooked, I prefer frozen strawberries instead of fresh. This is because frozen strawberries are actually healthier than fresh, if you can believe it!

Frozen strawberries are flash frozen right from the field, so they don’t need a bunch of unhealthy preservative sprays to keep them fresh-looking.

What can I use this keto strawberry sauce on?

There's nothing better than freshly homemade keto strawberry topping for your cheesecake, pancakes, or ice cream! Try this easy sugar free strawberry sauce for cheesecake and you'll see.

Instructions

  1. Add the strawberries, sweetener, lemon juice, and water to a medium saucepan. Bring to a boil while stirring occasionally. The strawberries will begin to release their juices--this is normal and makes the sauce! Add ingredients for easy keto strawberry sauce
  2. Reduce the heat to a simmer. After the strawberries have released their juices a little, sprinkle the xanthan gum on top of the sauce and stir in. Do not just dump the xanthan gum, or it will clump.
  3. Simmer for about 10 minutes (or longer if you prefer thicker sauce). Stir occasionally. Simmer all ingredients for sugar free strawberry sauce for cheesecake
  4. Remove from heat and enjoy on top of cheesecake, pancakes, or ice cream! Save any leftover sauce in a sealed container the refrigerator for up to one week. Sugar Free Strawberry Sauce for Cheesecake

    Can I make a large batch and freeze in freezer until use? Will thawing ruin the texture/taste?

      It should be fine! I would first wrap it in plastic wrap, and then a layer of foil over that before putting it int the freezer. Thaw it in the fridge before eating. Enjoy!

        This is absolutely amazing! My only problem is I only get about 4 servings at 1/8 cup . What am I doing wrong???

          That’s a really good question. I’m not really sure, to be honest. I wonder if your strawberries released less juices. I just made it for some ice cream today and used a different brand than normal of frozen strawberries and I was impatient, so I didn’t let them thaw first. Mine ended up with a lot less liquid this time around. I hope that helps!

    I loved this recipe! My only issue was the sauce kind of crystallized instead of staying smooth. I used powdered erythritol. Do you have any recommendations for that not to happen next time?

      That’s a really great question. I’ve actually decided to go back and add an ingredient to this recipe because of the nature of erythritol and how easily it crystallizes. It calls for monkfruit sweetener, but most monkfruit sweeteners also have erythritol. And if you chose to only use erythritol in this recipe, you’d most definitely come across the crystallization problem. Just add 1/4 teaspoon xanthan gum when the strawberries have released their juices a bit and it starts to look more like a sauce. Just be sure to sprinkle the xanthan gum and not dump it on. It will clump pretty easily if you just dump it. I’m so glad you enjoyed it! I love making this sauce in the cold months when I want to remember summer! :)

    I have made this five times now and every time it’s just as good as the last! I also use a combination of sweeteners are used sweet and low Allulose and a little swerve… mostly I’m just playing with ingredients a little bit as I’m trying to be better about my health :-) I also want to say that it’s a huge hit with my kids they don’t even notice that it’s sugar-free!     Can you use cornstarch instead of xanthum gum to thicken?

      You could certainly try that. I haven’t tried cornstarch in this recipe before. Corn products are not generally considered keto-approved, so if you’re going for keto, you may want to check the carb count on it.
