If I don’t have something on hand, can I substitute other ingredients for these keto breakfast bowls?
Yes! Other great keto burrito bowl ingredients you could sub in are: cheddar cheese, riced cauliflower, guacamole, chopped romaine or iceberg lettuce, cilantro, bell pepper, green chiles, and red onion. In this post I suggest sweet pork or ground beef taco meat, but other great ideas are fajita chicken, shredded chicken, or carnitas.

What if I want to add a dressing?
Oh, Mama Mia, am I glad you asked! (Wait, are we switching to Greek food now? Now I’m thinking of a nice lamb and feta bowl…yum!) Ahem…Yes! You can use whatever keto dressing you like on these bowls. My absolute favorite for Mexican style salads and burrito bowls is this Keto Tomatillo Dressing. If I have it in the fridge, it goes on everything. Tomatillos are a favorite of mine and I just love their fresh bright flavor in dressings.
- Split all ingredients evenly between two bowls, adding cooked scrambled eggs, warm keto sweet pork or keto taco meat and diced avocado first.
- Add a dollop of sour cream to each bowl and sprinkle with the cotija cheese. Enjoy!
