Creamy Keto Stroganoff Mushrooms Ingredients

What goes into this simple creamy keto stroganoff mushroom recipe? Lookee here!

  • Mushrooms (any will do! I like variety in my diet, so I used half white and half cremini mushrooms this time.)
  • Celery
  • Butter (grass fed, if possible!)
  • Better Than Bouillon beef base
  • Fresh rosemary (dried is fine, but reduce to 1 tsp)
  • Fresh sage (dried is fine, but again, reduce to 1 tsp)
  • Garlic
  • Heavy whipping cream
  • Sour cream (the mushrooms’ co-star in this recipe, in my opinion!)

Which type of mushrooms can I use for this side dish recipe?

You can use whatever mushrooms your heart desires for this stroganoff recipe! I personally really enjoy trying new mushroom varieties. The mushroom varieties readily available in most grocery stores are all low carb and substitute very well in this recipe.

Should I wash the mushrooms? What can I do instead of washing mushrooms?

It’s not necessary. There’s a lot of debate as to whether mushrooms should be washed before cooking them. You probably won’t notice a huge difference whether you wash them or not, but many say that the water soaks into the spongy mushrooms, preventing other yummy flavors from being absorbed instead, and making them soggy.

So if you want to keep that from happening, how do you clean mushrooms instead? Cleaning mushrooms without water is very easy, but a little more time-consuming. You simply wipe them off gently with a clean dry cloth. Again, this is not necessary, but I’d love to know whether you think washing or wiping with a dry cloth is better! Can I use dried rosemary and sage?

Yes! The dried forms of herbs tend to be more potent, so if you’re using dried sage and rosemary, you will want to reduce the amount from 1 tablespoon each, to 1 teaspoon in these creamy keto stroganoff mushrooms.Fresh rosemary and sage in garden for creamy low carb mushrooms

Can I skip the sour cream?

My answer to this question is a little tongue-in-cheek. You certainly can leave out the sour cream, but why in the world would you want to do such a thing! The sour cream is what gives this dish a bodied, rich, and tangy taste that we all love in stroganoff.

  1. Add butter, beef base, water, and celery to skillet and cook till tender.
  2. Add mushrooms and sauté about 15 minutes.
  3. Add garlic, rosemary, and sage. Sauté 2 more minutes.Saute garlic, mushrooms, sage, rosemary for creamy stroganoff mushrooms
  4. Add cream and simmer till thickened to your preference. Add sour cream, stir. Add sour cream to mushrooms and stir
  5. Remove from heat. Serve and enjoy!
