The first time I had these jello cups was when some friends invited us to their hobby farm for the first time and we enjoyed hot dogs, sides, and these raspberry desserts using their homegrown raspberries.
Our kids had a blast mooing at their cows, smelling their herb garden, tasting everything the farm had to offer, and of course, eating their jello dessert.
And now we can make it sugar free. My kids can’t even tell!

Keto Jello Made from Unflavored Gelatin
As I mentioned earlier, using unflavored gelatin packets instead of the pre-flavored and pre-sweetened instant sugar free jello cuts down on the less healthy sweeteners.
It also gives you more control over your ingredients overall. If you don’t like the aspartame that’s in most sugar free jello mixes, you can use monkfruit (like in this recipe!) or whatever keto sweetener you prefer.
Keto Sugar Free Raspberry Jello Cups
These sugar free raspberry jello desserts have to be the easiest dessert you'll ever make! They're higher in protein with the gelatin and come together in a snap with a few simple ingredients.
Ingredients
- 1 cup boiling water (3 minutes in microwave)
- 1 cup cold water
- 3 packets unflavored gelatin
- 1/2 cup monkfruit sweetener
- 3/4 teaspoon raspberry flavoring (I like this one!)
- 1/2 teaspoon red food coloring (optional)
- 1/2 cup raspberries
- sugar free whipped cream for topping (optional)
Instructions
- In a medium bowl, add the hot water, monkfruit sweetener, raspberry flavor, and food coloring (optional). Whisk until the sweetener is completely dissolved.
- Place the cold water in a small bowl and evenly sprinkle the gelatin powder on top. Let sit for 2 minutes.
- Add the gelatin water to the hot water and whisk for 1-2 minutes until all ingredients are dissolved.
- Divide the raspberries evenly and place in the bottom of four dessert cups. Pour the gelatin liquid over the raspberries, dividing the liquid evenly among the four cups.
- Refrigerate until set, about 2-3 hours. Top with sugar free whipped cream and extra raspberries if desired and enjoy!

What a fun idea! I haven’t tried that before, but it would be an interesting experiment. I would think it would be very close, but the texture would still be a little different. You would want to experiment with the amount of gelatin, too, to get the thickness you prefer. Let me know if you do try this! I’d be very interested to know how it turns out!
