There are two possible causes of lumpiness or graininess in a gelatin cheesecake.
1. The cream cheese: The cream cheese was not room temperature when you started mixing. Either that, or you did not blend it till it was completely smooth.
If you don’t want to wait a few hours for your cream cheese to get to room temperature, most microwaves have an auto defrost function that is a lifesaver!
2. The gelatin: You can reduce the natural lumpiness of gelatin by processing the gelatin/water mixture in a blender and then adding it to the bowl with the rest of the filling ingredients and mix it in thoroughly.
Part of the reason the gelatin does this is because it is bloomed in so little water. You can also try using more water to bloom the gelatin, but be aware that your finished cheesecake will be softer.

This low carb no bake cheesecake is creamy, rich, and absolutely amazing with its fresh made strawberry topping. You'll love this low carb strawberry cheesecake!
Ingredients
Keto Cheesecake Crust - no bake
- 4 tablespoons ground flax meal
- 1/3 cup almond flour
- 1/2 cup ground walnuts (processed in blender)
- 1 tablespoons powdered monkfruit sweetener
- 2 tablespoons unsalted butter, melted
- dash pink Himalayan salt
No Bake Keto Cheesecake
- 2 8-ounce packages of cream cheese at room temperature
- 3/4 cup sour cream
- 3/4 cup powdered monkfruit sweetener
- 1 teaspoon pure vanilla
- 1/8 teaspoon pink Himalayan salt
- 1/2 cup water
- 1 packet unflavored gelatin
Sugar Free Strawberry Sauce for Cheesecake
Instructions
Keto Cheesecake Crust - No Bake
- Butter the sides and bottom of a springform pan.
- Add all crust ingredients together in a small bowl and stir till thoroughly combined.
- But the crust into the pan and mush it down with your fingers until it's evenly spread on the bottom of the pan only. Place in refrigerator until filling is ready.
No Bake Keto Cheesecake
- Add cream cheese and sour cream to a mixing bowl. Cream together till smooth with no lumps.
- Add sweetener, vanilla, and salt. Mix again till thoroughly incorporated.
- Put water into a small bowl. Evenly sprinkle the gelatin over the top. Allow to sit for 1-2 minutes until the gelatin has "bloomed."
- Scrape the gelatin mixture into the mixing bowl with the cream cheese mixture and mix until smooth.
- Pour into the springform pan over the crust and smooth over the top with a rubber spatula.
- Refrigerate for at least 2 1/2 hours for firmer cheesecake or 30 minutes for softer cheesecake

Appreciate your webpage – Keto recipes are difficult to find. I noticed one problem which I wish to bring to your attention. Carbohydrates are at the heart of the Keto/Carnivore diet. They are to be limited to twenty or less a day. Keeping track of them is relatively easy. When you consume fresh vegetables you count net carbs. In ALL other instances you must count total carbs. You choose to publish only net carbs. This is incorrect! Could you please include total carbs with all Keto recipes? Limiting total carbs will increase the success of Keto followers.
Thanks for bringing up some important points, Debbie! Did you know that there’s actually no “incorrect” way to do keto? The whole point of the ketogenic diet is to keep your body in ketosis so your body will burn fat instead of carbs. For some people, that’s 20 carbs and for others that’s 50 (I just talked to someone yesterday who has hers at 10–phew! She’s basically doing a carnivore diet). It’s a misconception that there’s a specific number of carbs that works across the board for everyone. I do choose to publish net carbs because that’s what a large chunk of the keto scene likes (and it’s how I count mine when I’m doing keto). I may consider including both in the future, but it may take a while to get to that point.
