Best Sweeteners for These No Bake Keto Mini Cheesecakes
In general, keto sweeteners don’t dissolve as easily as regular sugar. If it’s a baked or cooked dessert, it’s no problem to get the sweetener to dissolve with heat.
It’s a different story when you’re not applying heat. This is why it’s very important when making keto no bake desserts to use a powdered sweetener.
My favorite for this reason (and for taste!) is powdered monkfruit sweetener, which is used both in the crust and the filling of these cheesecakes.
No Bake Keto Mini Cheesecake Cups
These cute little keto no bake mini cheesecake cups are so adorable! The topping pictured here is the mixed berry sauce, but you can use whatever you like to top these keto cheesecake cups!
Ingredients
Keto No Bake Cheesecake Crust
- 2 tablespoons flax seed meal
- 3 tablespoons almond flour
- 1/4 cup ground walnuts (process whole walnuts in blender)
- 2 tablespoons coconut flour
- 2 tablespoons powdered monkfruit sweetener
- 2 tablespoons butter, melted
- Dash of pink Himalayan salt
Keto Mini Cheesecake Filling
- 1/4 cup water
- 1 packet unflavored gelatin
- 1/2 cup powdered monkfruit sweetener
- 1/3 cup sour cream
- 1 8-ounce package cream cheese, room temperature
- 1/2 teaspoon vanilla
- 1/2 teaspoon lemon juice
- Dash of pink Himalayan salt
Instructions
Keto No Bake Cheesecake Crust
- Butter the sides and bottoms of 6 glass dessert cups (mine are 3/4 cup or 6 oz.).
- Add all the crust ingredients to a small bowl and stir till combined.
- Divide the crust evenly between the dessert cups and mush it down with your fingers or back of a spoon till it's evenly spread and flattened to the bottom of each cup.
Keto Mini Cheesecake Filling
- Add cream cheese and sour cream to a mixing bowl. Cream together till smooth with no lumps.
- Add sweetener, vanilla. lemon juice, and salt. Mix again till thoroughly incorporated.
- Put water into a small bowl. Sprinkle the gelatin evenly over the top of the water. Allow to sit for 1-2 minutes until the gelatin has "bloomed."
- Scrape the gelatin mixture into the mixing bowl with the cream cheese mixture. Mix until smooth with no lumps.
- Pour into the dessert cups over the crust, dividing evenly. Smooth over with a rubber spatula.
- Refrigerate for 20 minutes for softer texture to one hour for firmer texture. Add whatever topping you like, and serve! (See list above recipe for keto cheesecake topping ideas.)
