Keto Mini Cheesecake Filling
Keto No Bake Cheesecake Crust Butter the sides and bottoms of 6 (mine are 3/4 cup or 6 oz.). glass dessert cups Add all the crust ingredients to a small bowl and stir till combined. Divide the crust evenly between the dessert cups and mush it down with your fingers or back of a spoon till it's evenly spread and flattened to the bottom of each cup. Keto Mini Cheesecake Filling Add cream cheese and sour cream to a mixing bowl. Cream together till smooth with no lumps. Add sweetener, vanilla. lemon juice, and salt. Mix again till thoroughly incorporated. Put water into a small bowl. Sprinkle the gelatin evenly over the top of the water. Allow to sit for 1-2 minutes until the gelatin has "bloomed." Scrape the gelatin mixture into the mixing bowl with the cream cheese mixture. Mix until smooth with no lumps. Pour into the dessert cups over the crust, dividing evenly. Smooth over with a rubber spatula. Refrigerate for 20 minutes for softer texture to one hour for firmer texture. Add whatever topping you like, and serve!
